

Diner-Style Smash Burgers
Smashing the patty thin against a ripping hot pan gives you those lacy, crispy edges that make a diner burger great. Stack two if you're hungry. Mustard, pickles and a little mayo is all the sauce it needs.

Method

Slice the onion paper-thin.

Toast the burger buns until golden.

Heat a cast-iron or heavy pan over high until it's smoking. Roll the Beyond Beef into 4 loose balls.

Place two balls in the pan, lay the onion on top, and smash flat with a spatula. Season with salt and pepper.

Flip when the edges are deeply browned, add cheese, and cover for 30 seconds to melt. Repeat with the rest.

Spread the buns with mayo and mustard and stack two patties on each. Finish with lettuce, tomato and pickles.
Cook fresh. Uncooked patties keep 2 days in the fridge.

Make a slider-size patty and let them add their own toppings.
