Creamy Stovetop Mac

The secret to this mac is the sauce, which is silken tofu blended with nutritional yeast and mustard. It comes out velvety and cheesy and clings to every noodle. Chickpea pasta doubles the protein, and nobody at the table will notice.

Method

    Cook the pasta in salted water according to the package.

    While it boils, blend the silken tofu with the nutritional yeast, soy milk, Dijon, spices and salt until smooth.

    Drain the pasta and return it to the pot over low. Add the butter and sauce and stir until hot and glossy.

Storage

Keeps 3 days. Add a splash of soy milk when reheating.

Good to know
  • Toss in frozen peas or broccoli for the last 2 minutes of the pasta boil. One less pan.
