

Easy Vegan Tofu Scramble
Tofu scramble is a classic plant-based breakfast where crumbled tofu soaks up turmeric, nutritional yeast and garlic for a cheesy, eggy flavor. It comes together in one skillet and works on toast, in a wrap, or on its own.

Heat a large skillet over medium heat. Lightly coat it with avocado oil spray if you like.

Crumble the tofu into the skillet in small, uneven pieces so it looks like scrambled eggs.

Cook the tofu, stirring now and then, until some of the moisture cooks off.

Add the nutritional yeast, black pepper, salt, turmeric and garlic powder. Stir well until every piece is evenly coated.

Keep cooking, stirring now and then, until the scramble is heated through and the flavors come together.

Taste and adjust the seasonings. Sprinkle on some vegan cheese if you like, then serve warm.
- For a softer scramble, cook it for less time.
- For a firmer, slightly drier scramble, let the {protein} cook a little longer before you add the seasonings.
