Slice the avocado.

Heat a skillet with the olive oil over medium heat. Add the chorizo seitan, paprika, garlic powder, salt, and pepper, and cook for 3–4 minutes, until lightly browned.

Lay one tortilla in the skillet and spread the refried beans evenly over it.

Add the seitan, vegan cheese, and avocado.

Place the second tortilla directly on top and gently press it down.

Cook for 2–3 minutes until the bottom is golden and crispy.

Carefully flip and cook the other side for another 2–3 minutes, until crispy and the cheese is melted.

Let it sit for about 1 minute, then cut into wedges.

Serve the wedges with the coconut yogurt for dipping.
Best fresh. Refrigerate leftovers for 2–3 days and reheat in a skillet or air fryer so the tortillas crisp back up. Keep sour cream separate until serving.
- Serve with plain yogurt or vegan sour cream. Add salsa, cilantro, jalapeños, hot sauce, or pickled red onion. You can also swap the avocado for guacamole.
