

Sandra's Chocolatey Fig Smoothie
The cook behind this recipe blends up this smoothie when a chocolate craving hits but breakfast needs to stay wholesome. Crunchy cacao nibs act like little chocolate chips, and a fresh fig on top makes it feel like a treat.

Method

Slice the fresh fig into thin rounds and set it aside for topping.

Split the vanilla bean lengthwise and scrape out the tiny seeds with the tip of a knife.

Peel the bananas and add them to your high speed blender with the soy milk, vanilla seeds, frozen cherries, dates and cacao powder.

Blend until smooth. Add a splash more soy milk if it is too thick, or a few more bites of banana if it is too thin.

Add the 1 tablespoon of cacao nibs and blend on a medium speed (5 to 6) for 20 to 25 seconds, just enough to mix them in.

Pour into your favorite glass, top with the fig slices and a sprinkle of cacao nibs, and enjoy right away.
Best enjoyed right away. Leftovers keep in a sealed jar in the fridge for up to 24 hours, so give it a good shake before drinking.
- Blend the cacao nibs only briefly. If you blend too long or too hard, they break down into the smoothie and you lose the chocolate chip crunch.
- Use very ripe bananas for the sweetest, creamiest result.
