Jonny's mean green juice

Jonny Morelli makes this juice whenever he wants a fresh, bright start to the day. Kale and parsley bring the deep green, while ginger and lemon give it a sharp, wake-you-up bite.

Method

  1. 1

Rinse the kale, parsley and celery well under cold water, and scrub the cucumber, apple and ginger.

  2. 2

Chop the celery and cucumber into pieces that fit your juicer chute, and cut the apple into wedges, removing the core.

  3. 3

Peel the lemon and cut it into quarters. Slice the ginger thumb into a few chunks, no need to peel if it is scrubbed clean.

  4. 4

Tear the kale into big handfuls and bunch the parsley together so the leaves feed in easily.

  5. 5

Feed the kale and parsley into the juicer, alternating with the celery and cucumber so the leaves get pushed through.

  6. 6

Juice the apple, ginger and lemon last to flush out the remaining green juice.

  7. 7

Give the juice a good stir, then taste. Add a little more lemon or ginger if you want it meaner.

  8. 8

Pour into two glasses over ice and drink right away while it is at its freshest.

Storage

Best drunk right away. Keep any extra in a sealed jar in the fridge for up to 24 hours and shake before drinking.

Good to know
  • No juicer? Blend everything with 1 cup of cold water, then strain through a nut milk bag or fine sieve.
  • Add the apple last or use a second one if you want it sweeter.
