

Miso-Glazed Tofu and Brown Rice Box
White miso, maple and a little rice vinegar caramelize on the tofu in the oven while you do nothing. Sesame greens and brown rice round it out. It's calm food that still tastes like a treat.

Method

Heat the oven to 425°F. Cut the tofu into slabs about a half inch thick and lay them on a lined sheet pan.

Whisk the miso, maple, rice vinegar and half the sesame oil. Brush most of it over the tofu and roast until the glaze caramelizes, brushing with the rest halfway.

Meanwhile, stir-fry the broccoli in the rest of the sesame oil for 4 minutes, add the garlic, spinach and edamame, and toss with the soy sauce until the spinach wilts.

Divide the rice, greens and tofu between 4 boxes and finish with green onion.
Keeps 5 days in the fridge. The whole box freezes well for 2 months; thaw overnight in the fridge.
- Miso burns fast. If the edges darken before the time is up, drop the oven to 400°F.
