Nutty soba noodles tossed in a sesame-ginger dressing with crispy tofu, edamame and a pile of crunchy vegetables. It's built to be eaten cold, which makes it the easiest lunch you'll pack all month.

Method

Heat the oven to 425°F. Cube the tofu, toss with the cornstarch and a pinch of salt, and roast on a lined pan until crisp.

Cook the soba per the package, then rinse well under cold water so it doesn't clump.

Whisk the soy sauce, rice vinegar, sesame oil, tahini, maple, ginger and garlic.

Toss the noodles with a third of the dressing. Divide between 4 boxes and top with the edamame, cucumber, carrot, cabbage, tofu and green onion. Pack the rest of the dressing on the side.
Keeps 4 days in the fridge. Soba soaks up dressing overnight, so the extra cup of dressing on the side keeps it saucy. Not a freezer box.
- Look for 100% buckwheat soba if you need it gluten-free, and use tamari or coconut aminos.
