

Korean BBQ Tofu Bibimbap Box
Bibimbap is basically a meal-prep box that got famous. Gochujang-glazed tofu, garlicky spinach, quick-pickled cucumber and carrots, all packed separately over rice so you get a new bite every time.

Method

Heat the oven to 425°F. Cut the tofu into cubes, toss with the cornstarch and a pinch of salt, and roast on a lined pan until crisp.

Toss the cucumber and carrots with the rice vinegar and a pinch of salt. Let them quick-pickle while everything else cooks.

Wilt the spinach in a pan with the garlic and a few drops of the sesame oil, about 2 minutes. Season with salt.

Warm the gochujang, soy sauce, maple and remaining sesame oil in the same pan, then toss the hot tofu in it until glossy.

Divide the rice between 4 boxes. Arrange the tofu, spinach, pickles and edamame in sections over the top and finish with green onion.
Keeps 4 days in the fridge. Drain the pickles before packing so the rice stays fluffy. The rice and tofu freeze well without the pickles.
- Reheat the rice and tofu, then add the cold pickles on top. The hot-cold contrast is the best part.
