

Take-Out Tofu Cubes
Most Asian restaurants will make you a great plate of vegetables and rice or noodles. What they won't have is a real protein. These fix that. Air-fry a batch, toss them in coconut aminos with garlic and ginger, and pack a tub for fried rice, pho, a noodle bowl or a veggie stir-fry.

Method

Heat the oven to 425°F. Pat the fava bean tofu dry, cut it into 3/4-inch cubes and toss with the cornstarch and sesame oil until every side is coated.

Spread on a lined sheet pan and roast, flipping once, until golden and crisp at the edges.

Stir the coconut aminos, garlic and ginger together in a big bowl. Toss the hot cubes in it until the sauce is soaked up, then let them cool.

Pack into 4 small lidded tubs and scatter the green onion on top.
Keeps 4 days in the fridge. Out of the fridge, eat within 2 hours (1 hour on a hot day).
- Match the menu. Teriyaki for Japanese, sesame ginger for Chinese, sriracha and lime for Thai or Vietnamese.
- At the table, spoon it right onto vegetable fried rice, lo mein, pho or a veggie stir-fry.
- Fava bean tofu is the protein champ here, about 32 g a tub with zero carbs or fat. Any tofu works.
