Tandoori Tofu Bites To-Go

Indian food is one of the easiest cuisines to eat plant-based, with dal, chana masala and aloo gobi on almost every menu. Protein is the gap. These spiced, charred tofu bites drop right into a curry and taste like they came from the same kitchen.

Method

    Heat the oven to 425°F. Cut the super-firm tofu into 1-inch cubes.

    Stir the yogurt, spices, lemon, garlic, ginger and salt in a bowl. Add the super-firm tofu and toss until every piece is coated.

    Spread on a lined sheet pan and roast until charred at the edges.

  4. 4

    Cool, then pack into 4 small lidded tubs.

Storage

Keeps 4 days in the fridge. Out of the fridge, eat within 2 hours (1 hour on a hot day).

Good to know
  • Order chana masala, dal, aloo gobi or baingan bharta with rice and drop these in.
  • Ask for no ghee or cream. Many kitchens finish dal and vegetables with butter unless you ask.
  • Soy-free? Swap in fava bean tofu above for the same protein with fewer calories.
