

Green Goddess Quinoa Crunch Box
The green goddess dressing is the whole point: tahini, avocado, lemon and a fistful of herbs blended into something you'll want to drink. Everything else is there to catch it. Crispy tofu, fluffy quinoa and a pile of crunchy greens.

Cook the quinoa (about 1 cup dry) according to the package directions, then fluff with a fork and let it cool.

Heat the oven to 425°F. Tear the tofu into bite-size pieces, toss with the cornstarch, half the oil and a pinch of salt, and spread on a lined sheet pan.

Toss the broccoli with the rest of the oil on a second pan. Roast both until the protein is crisp at the edges and the broccoli is charred in spots.

Meanwhile, toast the 3 tbsp pumpkin seeds in a dry skillet over medium heat, stirring often, until fragrant and popping. Tip onto a plate to cool.

Meanwhile, blend everything for the green goddess until smooth and pourable. Taste for salt and lemon.

Line up 4 boxes. Divide the quinoa, then the tofu, broccoli, edamame and cucumber. Sprinkle the pepitas on top.

Spoon the dressing into 4 small lidded cups and tuck one into each box.
Keeps 4 days in the fridge. Keep the dressing in its own cup so the tofu stays crisp. Don't freeze (the cucumber won't forgive you).
- Eat it cold, or warm just the quinoa and tofu for 60 seconds and add the cucumber and dressing after.
- A squeeze of lemon over the dressing on day three wakes it right back up.
