Classic Buddha Box

Some bowls are trendy. This one is just correct. Roasted sweet potato, crispy tofu and chickpeas share the oven, the kale gets massaged until it gives up, and the lemon tahini makes it all taste finished.

Method

  1. 1

    Heat the oven to 425°F. Tear the tofu into bite-size pieces and toss with the chickpeas, cornstarch, half the oil, half the spices and a pinch of salt on one sheet pan.

    Toss the sweet potato and onion with the rest of the oil and spices on a second pan. Roast both, shaking once, until the tofu and chickpeas are crisp and the sweet potato is caramelized.

    Massage the kale with the lemon and a pinch of salt for a minute, until it softens and turns glossy.

    Whisk the tahini, lemon, maple, salt and water until creamy. Add water a spoon at a time if it's thick.

    Divide the rice, kale, sweet potato, chickpeas and tofu between 4 boxes. Sprinkle with hemp hearts and pack the sauce in small cups.

Storage

Keeps 5 days in the fridge. Massaged kale holds up all week. The tofu and chickpeas soften by day three, so re-crisp them in the air fryer for 3 minutes if that bothers you.

Good to know
  • Great cold. If you reheat, microwave without the sauce for 90 seconds, then drizzle.
