Method

  1. 1

Blend the oats for a few seconds until they turn into a fine oat flour.

  2. 2

In a microwave-safe mug or ramekin, stir together the oat flour, Vedge protein, baking powder, and salt.

  3. 3

Pour in the soy milk, agave, vanilla extract, and almond extract. Mix until no dry spots are left.

  4. 4

Microwave for 2 minutes 30 seconds. Use an oven mitt to take out the mug, because it will be very hot.

  5. 5

Top with the rainbow sprinkles and enjoy right away.

Storage

Best eaten fresh from the mug.

Good to know
  • Use a mug that is big enough, since the cake rises as it cooks.
  • Let it cool for a minute before digging in so it sets up a bit.
