Cookie Dough Energy Bites

Oats, peanut butter, protein powder and a few chocolate chips, rolled into bites that taste like the best part of a cookie. They're the thing you grab at 3 p.m. instead of the vending machine. Make them on Sunday and hide a few from yourself.

Method

  1. 1

Stir the peanut butter, maple, oat milk and vanilla together in a bowl until glossy.

  2. 2

Add the oats, flax, salt and the protein powder and mix until it holds together when pressed. Add a splash more milk if it's crumbly.

  3. 3

Fold in the chocolate chips and roll into 12 balls, about a tablespoon each.

  4. 4

Chill for 20 minutes to firm up, or eat one right away. We won't tell.

Storage

Keeps 7 days in the fridge or 3 months in the freezer.

Good to know
  • Peanut allergy? Sunflower seed butter works one to one.
