Peanut Butter Stuffed Sweet Potatoes

Method

    Scrub the sweet potatoes, cut each in half lengthwise, and pierce each half a few times with a fork.

    Microwave for 3 minutes, flip, and cook another 2 minutes, until a fork slides in easily.

    Meanwhile, mix the Vedge protein and peanut butter powder with water, a spoonful at a time, until it's thick like pudding.

    Cut the cooked potatoes down the middle again and scoop out a little of the flesh (eat it with the leftover filling). Fill each potato with the peanut butter protein mix.

    Want it warm? Microwave another 45 to 60 seconds. Dust with cinnamon and eat.

  • Any vanilla or cinnamon plant protein works. Swap it above and the macros update.
