Whisk the flour, protein powder, psyllium husk, oat fiber, egg white powder, brown swerve, baking powder, baking soda and salt together in a bowl.

Stir in the applesauce and coffee syrup until you have a thick, even batter.

Let the batter rest for 5 minutes so the psyllium and oat fiber can thicken it.

Heat a nonstick pan over medium-low heat.

Scoop the batter into the pan in rounds and cook until bubbles form and the edges look set.
