Two-Minute Edamame Rice Bowl

This is what you make when you get home starving and dinner feels impossible. A rice pouch and a bag of frozen edamame, both straight into the microwave, then soy, sesame and a little heat. It's gone before you sit down.

Method

  1. 1

    Microwave the rice pouch and the edamame (in a covered bowl with a splash of water) for 90 seconds each.

    Dice the cucumber and slice the green onions.

  3. 3

    Whisk the soy sauce, sesame oil, rice vinegar and sriracha in a cup.

  4. 4

    Pile the rice, edamame and cucumber into a bowl, pour over the dressing and finish with green onions.

Storage

Best fresh. The dressing keeps a week in a jar, so make a triple batch.
