

Lentil and Mushroom Bolognese
Finely chopped mushrooms and lentils give this bolognese the rich, meaty body of the one your grandmother made. It simmers low while you do other things, and the kitchen smells incredible. Make the whole pot, portion it, and weeknight pasta is solved for the month.

Method

Heat the oil in a large pot over medium. Cook the onion and carrot until soft.

Turn the heat to high and add the mushrooms. Cook until their liquid is gone and they're browning.

Stir in the garlic and seasoning for a minute, then add the lentils, tomatoes, soy sauce and salt.

Simmer low, partly covered, stirring now and then.

While the sauce simmers, cook the pasta in a large pot of salted boiling water until al dente. Scoop out some pasta water, then drain.

Toss with cooked pasta and a splash of pasta water. Finish with nutritional yeast.
The sauce keeps 5 days and freezes for 4 months. Freeze it without pasta, in 2-portion containers.
- Using TVP? Add it dry with an extra cup of broth. It soaks up the sauce as it simmers.
For little ones
Serve as is, with a sprinkle of nutritional yeast.
