

Derek's Cajun Buddha bowl
A twist on the classic buddha bowl, built around quick sauteed black beans with a garlicky Cajun kick. Everything else is fresh and optional, so it bends to whatever veggies you have.

Method

Mix the cumin, garlic, Cajun seasoning, garlic powder and the first 1/4 cup of salsa in a small bowl.

Warm a pan over medium heat and saute the onion until tender. If it sticks, add a splash of water.

Add the black beans and corn and saute until cooked through.

Stir in the seasoning and salsa mix, toss everything together, then take the pan off the heat.

Toss the avocado with the fresh parsley.

Build your bowl: rice first, then the seasoned black beans, avocado, cabbage, tomato, greens and bell pepper. Finish with the remaining salsa.
- The bowl toppings are all optional. Swap in whatever veggies you like or have on hand.
- Make a bigger batch of the bean mix and keep it in the fridge for quick lunches.
