Lentil Sloppy Joes

Tangy, sweet, a little smoky, and exactly as sloppy as the name promises. Lentils soak up the sauce like they were born for it. Grab extra napkins and don't apologize.

Method

    Warm the oil in a skillet and cook the onion and pepper until soft.

    Add the garlic for 30 seconds, then the lentils. Mash about a third of them with a spoon for a meatier texture.

    Stir in the tomatoes, BBQ sauce, mustard and spices. Simmer until thick enough to hold on a bun.

    Toast the burger buns in a dry pan or toaster while the filling finishes.

  5. 5

    Pile onto toasted buns and top with pickles.

Storage

Filling keeps 5 days and freezes for 3 months.
