

Glazed Lentil and Walnut Loaf
Lentils, walnuts and mushrooms bake into a savory loaf with a sticky, tangy glaze. It's the one to bring to a holiday table or a Sunday dinner with the folks. Leftover slices make the best sandwich of your life.

Method

Heat the oven to 375°F and line a loaf pan with parchment. Stir the flax and water together and let it thicken.

Finely dice the onion, grate the carrots and finely chop the mushrooms.

Toast the walnuts in a dry pan until fragrant, then chop them.

Cook the onion, carrot and mushrooms in a dry pan until all the liquid is gone and they start to brown.

Mash half the lentils in a big bowl, then fold in the rest, the cooked vegetables, flax, walnuts, panko, nutritional yeast, hemp, spices and a teaspoon of salt.

Whisk the BBQ sauce and coconut aminos together for the glaze.

Press firmly into the pan and spread half the glaze over the top. Bake.

Brush with the rest of the glaze and bake again until sticky.

Rest at least 15 minutes before slicing so it holds together.
Keeps 5 days in the fridge. Freeze slices for up to 3 months and reheat in the oven.
- Swapping to Beyond Beef? Skip the flax and bake 10 minutes less. It holds together on its own.
