Thin tempeh strips soak up a quick soy, maple and smoked paprika glaze, then get pan-fried until the edges are crisp. It's not pretending to be bacon. It just does what bacon does in a sandwich, maybe better.
Slice the tempeh into strips about the thickness of a coin.
Whisk the soy sauce, maple and spices in a shallow dish. Toss the strips through to coat.
Slice the tomato.
Toast the bread until golden.
Heat the oil in a pan over medium-high. Fry the strips until dark and crisp at the edges, pouring the last of the glaze in at the end.
Spread the toast with mayo and stack with lettuce, tomato and bacon.
The cooked bacon keeps 5 days. Re-crisp in a dry pan.
