Teriyaki Tempeh Plate

Amanda Sick makes this teriyaki tempeh plate when she wants a big flavor payoff from a few pantry staples. She marinates the tempeh ahead so it soaks up all the garlic, ginger, and sweet-salty sauce.

Method

  1. 1

Stir the cornstarch into the 2 tbsp of water until smooth. In a small bowl, whisk it together with the coconut aminos, 1/4 cup water, 2 tbsp date syrup, minced garlic, and minced ginger. Add a pinch each of black pepper, garlic powder, and ginger powder if you like.

  2. 2

Slice the tempeh into strips about 1/2 inch thick and put them in a glass bowl. Pour the sauce over the top, then cover and marinate in the fridge for at least 1 hour. Morning prep works great too.

  3. 3

Cook the rice (or quinoa) following the package directions, so you end up with about 1 1/2 cups cooked.

  4. 4

Chop the broccoli into bite-size pieces and steam it until bright green and just tender.

  5. 5

Heat a cast iron pan over medium heat. Lift the tempeh strips out of the bowl, keeping the leftover sauce, and cook them for about 5 minutes on each side until browned.

  6. 6

Pour the rest of the sauce into the pan and let it bubble until thick and glossy.

  7. 7

Spoon the rice into bowls, top with the saucy tempeh and broccoli, and enjoy.

Storage

Keep the rice, tempeh, and veggies in an airtight container in the fridge for up to 4 days. Reheat in a pan or microwave.

Good to know
  • The longer the tempeh marinates, the more flavor it soaks up, so mix it the morning of if you can.
  • If the tempeh sticks to your pan, add a small splash of water or use a nonstick pan.
  • The sauce thickens quickly once it hits the hot pan, so keep stirring and watch it.
