Sticky Ginger Tempeh Stir-Fry

Frozen stir-fry veg is one of the best shortcuts in the store. Here it goes into a screaming hot pan with seared tempeh and a glossy ginger sauce. Everything gets sticky and savory and a little sweet, and nobody misses the delivery app.

Method

  1. 1

    Whisk the sauce ingredients in a cup.

    Heat half the oil in a large pan over high. Add the tempeh in thin slices and sear until golden on both sides, then push to the edge.

    Add the rest of the oil, the frozen vegetables, garlic and ginger. Stir-fry until the vegetables are hot and starting to char.

    Pour in the sauce and toss until everything is glossy and thick.

  5. 5

    Serve over rice.

Storage

Keeps 4 days. Great cold, honestly.

Good to know
  • Using seitan? Shred it by hand rather than slicing. It picks up more sauce that way.
