How to cook tempeh.

Tempeh is whole soybeans fermented into a firm cake. It has more protein and fiber than tofu and a satisfying bite. The trick is a quick steam first.

What to buy

  • Original soy tempeh

    The classic. Lightlife is in most stores.

  • Multi-grain or chickpea tempeh

    Milder flavor, and some are soy-free. Check the label.

Prep it right

  1. 1Steam or simmer it for 8 to 10 minutes first. It takes out any bitterness and helps it soak up flavor.
  2. 2Slice it thin for strips, cube it for bowls, or crumble it for tacos and bolognese.
  3. 3Marinate it after steaming, even just 15 minutes. Warm tempeh drinks up marinade.
Cook it
Pan
3 to 4 min a side

Medium-high, a little oil, until both sides are golden. Add sauce at the end and let it reduce.

Air fryer
390°F · 10 to 12 min

Marinated slices or cubes in one layer.

Crumbles
8 min

Crumble into a hot pan and brown hard, then season like ground meat.

Make it taste great

  • Smoky works best: soy sauce, maple, smoked paprika and liquid smoke makes tempeh bacon.
  • Peanut, BBQ and teriyaki sauces all pair well.

Mistakes to skip

  • Skipping the steam, which leaves it bitter
  • Cutting thick slabs that stay dry in the middle
