Tempeh gets tossed in smoky barbecue sauce and roasted until sticky, next to sweet potato wedges and a tangy slaw. It's the box that tastes like July, even in February.

Method

Heat the oven to 425°F. Toss the sweet potato wedges with the oil, smoked paprika and salt on a sheet pan.

Cut the tempeh into triangles, toss with the barbecue sauce and soy sauce, and add to a second pan.

Roast both pans, flipping once, until the sweet potatoes are browned and the tempeh turns sticky and caramelized.

Toss the slaw with the mayo, vinegar, Dijon and a pinch of salt.

Divide the sweet potatoes, black beans and tempeh between 4 boxes, with the slaw in its own corner or container.
Keeps 4 days in the fridge. Pack the slaw separately if you like it crunchy. The tempeh, beans and sweet potatoes freeze well for 2 months.
- Save a spoonful of barbecue sauce to brush on right before eating. Fresh sauce on reheated tempeh makes it taste just-made.
