Smoky Tempeh Jambalaya

Method

    Crumble the tempeh into bite-size pieces and brown it in the oil in a Dutch oven. Scoop it out.

    Cook the onion, pepper and celery until soft, then add the garlic and Cajun seasoning for 30 seconds.

  3. 3

    Stir in the rice, tomatoes, broth and the tempeh. Bring to a boil, cover and simmer on low until the rice is tender.

    Rest covered for 5 minutes, fluff, and finish with green onion and hot sauce.

Storage

Keeps 5 days in the fridge and freezes for 3 months.

Good to know
  • Using Smart Dogs? Slice them into coins and brown them in place of the tempeh for a classic andouille vibe.
