

Sausage, Lentil and Kale Soup
Smoky sausage coins, red lentils that melt into the broth, potatoes, kale and tomatoes. It's thick enough to stand a spoon in and cheap enough to feed a crowd. Keep a few quarts in the freezer and future you will be very grateful.

Method

Heat the oil in a large pot over medium-high. Sear the Smart Dogs, sliced into coins, until browned, then scoop out.

Add the onion and carrot and cook until soft. Stir in the garlic and spices for a minute.

Add the potatoes, lentils, tomatoes, broth and chickpeas. Simmer until the potatoes are tender and the lentils have melted in.

Stir in the kale and sausage and cook until the kale is bright and tender.

Finish with lemon and salt to taste.
Fridge 5 days. Freeze in quart containers for 3 months. Add a splash of broth when reheating, because the lentils keep thickening it.
