Ryan's High Protein TVP Three Bean Chili

This is the big-pot chili our home cook makes when the fridge needs to be stocked for the week. Smoky TVP, three kinds of beans, and a little cocoa for richness make every bowl taste like it simmered all day.

Method

  1. 1

Dice the onion and red bell pepper, mince the jalapeño and garlic, and rinse and drain all three cans of beans.

  2. 2

Stir the tamari, liquid smoke, and smoked paprika into the TVP once it has plumped up in the hot vegetable broth.

  3. 3

Heat the olive oil in a large Dutch oven or stockpot over medium-high heat. Add the onion, bell pepper, and jalapeño and cook until softened.

  4. 4

Add the garlic and stir for about 1 minute, until it smells amazing.

  5. 5

Add the seasoned TVP to the pot and cook, stirring often, until it browns slightly and looks like ground meat.

  6. 6

Stir in the chili powder, cumin, oregano, cocoa powder, cayenne, salt, and black pepper. Toast for 1 minute.

  7. 7

Pour in the crushed tomatoes, the can of tomato sauce, and the nutritional yeast. Stir well.

  8. 8

Fold in the kidney, black, and pinto beans. Bring everything to a boil.

  9. 9

Reduce the heat to low, cover, and simmer, stirring now and then.

  10. 10

For a thicker, meatier chili, take the lid off for the last 5 minutes. Taste and add more salt or cayenne if you like.

Storage

Cool, then portion into four 32-oz containers. Refrigerate 2 portions for 3 to 4 days and freeze the other 2 for up to 3 months. Reheat on the stove over medium heat for about 6 minutes, or microwave on high for about 2.5 minutes, adding 2 tbsp of water if the chili needs loosening.

Good to know
  • Each serving is big, about 410 calories and roughly 46g of protein, so it works as a full meal.
  • Use the boiling broth to plump the TVP before it goes in the pot. Dry TVP should never go straight into the pan.
  • Start with less cayenne, then add more at the end if you want extra heat.
