

Taco Night Crumbles To-Go
Bean-and-veggie tacos, a burrito bowl or fajita vegetables are easy to order almost anywhere. Bring these crumbles and it becomes a real high-protein meal. They taste like the taco night you grew up on and stay good cold or warm.

Pour 2 cups boiling water or broth over the TVP, cover and let it soak 5 minutes. Meanwhile, heat the oil in a skillet over medium and cook the onion until soft, then add the garlic and spices and stir for 30 seconds.

Squeeze out any extra water, add the soaked TVP and salsa, and cook until it's browned in spots and the pan is almost dry.

Finish with the lime and salt. Taste.

Cool, then pack into 4 small lidded tubs.
Keeps 4 days in the fridge. Out of the fridge, eat within 2 hours (1 hour on a hot day).
