

Sal's Sprout and Greens Steamed Pumpkin
A simple layered steamer dish where tender pumpkin, crunchy sprouts and soft greens cook together in one pot. Coconut cream and avocado make it feel rich without any fuss.

Method

Two days ahead, start sprouting your lentils or mung beans. Rinse them a couple of times a day until they sprout.

Fill a pot with a few inches of water, set the steamer over it and bring it to a simmer.

Cut the pumpkin into even chunks so it cooks through. Rinse the greens and the sprouts.

Layer the steamer with the pumpkin at the bottom, the sprouts in the center and the greens on top.

Sprinkle the curry powder and the salt over the layers, then cover the pot.

Steam until everything is tender, especially the pumpkin. A fork should slide in easily.

Move everything to plates. Drizzle with the soy sauce and the coconut cream, then add more salt to your liking.

Slice the avocado and serve it on the side.
- Start sprouting 2 days before you plan to cook.
- Season with any spices you like. Curry seasoning works well here.
- Cut the pumpkin into smaller pieces if you want it to finish at the same time as the greens.
