Rip Esselstyn makes this wrap when he wants a fast lunch that still packs in greens and plant protein. It comes together with no cooking, so it is easy to grab and go.

Method

Wash the kale, remove any tough stems, and chop it into small pieces. Slice the bell pepper into thin strips.

Cook the tofu until golden and heated through.

Slice the avocado half, or mash it with a fork if you like it spreadable.

Lay the wrap flat and spread the hummus over the middle, leaving an inch of space around the edges.

Pile on the kale, then add the tofu, avocado, and bell pepper. Drizzle with sriracha.

Fold in the sides, then roll the wrap up snugly from the bottom. Slice in half and eat right away.
Best eaten fresh. If you need to pack it, wrap it tightly in parchment and eat within a day.
- Massage the chopped kale with your fingers for 30 seconds to make it softer and easier to eat raw.
- Pan sear the {protein} for a few minutes per side if you want a warm, crisp bite.
- Go easy on the sriracha at first, then add more once you taste it.
