Method
- 1
Slice the lemon cucumbers into rounds, roughly 1/4" thick, or smaller if you want to taste the other ingredients more with each bite.
- 2
Slice the Asian pear into thin rounds.
- 3
Slice the tomato into rounds about the same size as or thicker than the cucumber slices.
- 4
Fold the lettuce leaves so they fit neatly on top of a cucumber round.
- 5
Lay out half of the cucumber rounds. Stack each with a slice of Asian pear, a slice of tomato and a folded lettuce leaf.
- 6
Top each stack with a pinch of sprouts and microgreens, then finish with a second cucumber round if you like a double-decker.
- 7
Serve right away while everything is crisp.
- Lemon cucumbers are used for their wide, round shape, but any cucumber works. Slice it on a slight angle for a wider base.
