Preheat your oven to 180 °C / 356 °F.

Add 200 g chestnut flour, the water, sugar, salt, olive oil and pepper to a large bowl.

Mix everything into a smooth, thick dough with no dry pockets of flour.

Line a cake pan with parchment paper and add the dough.

Press and smooth the dough into an even layer with the back of a spoon.

Scatter 2 tbsp pine nuts, the walnuts and the rosemary over the top.

Bake for about 25 minutes, until small cracks form on the surface.

Take the cake out and let it cool before cutting. Serve as a dessert or snack.
Keep covered at room temperature for up to 2 days, or in the fridge for up to 5 days.
- Chestnut flour is naturally sweet, so the cake only needs a little sugar.
- Wait until the cake has cooled before slicing so it holds together.
- Cut walnuts into smaller pieces if you want them to stay put on top.
