Vital wheat gluten dough is torn into little pieces and air fried until chewy on the inside and crisp outside. Toss them in a creamy buffalo queso for a high-protein snack.

Preheat your air fryer to 325°F.

In a bowl, mix 1 cup vital wheat gluten with the nutritional yeast, salt, garlic powder, and onion powder.

Add 1 cup water and stir until a dough forms. This dough is your vital wheat gluten.

Break the vital wheat gluten into small, bite-sized pieces.

Air fry the vital wheat gluten at 325°F for about 15 minutes. Go a few minutes shorter for softer bites or a few minutes longer for crispy ones.

Toss the hot bites in the queso and buffalo sauce, or serve the sauce on the side for dipping.
- Shake or flip the basket once halfway through so the bites cook evenly.
- Any sauce works here: BBQ, teriyaki, or hot sauce are all great.
- Leftover bites keep in the fridge for several days. Re-crisp them in the air fryer before saucing.
