

Build-a-Lunchbox Bento
Kids eat more when lunch looks like a snack board. This is the template we use: edamame for protein, pita and hummus to dip, crunchy cucumber and something sweet. Change one thing a day and it never gets boring.

Method

Microwave the edamame until hot, then cool under cold water and drain. Shelled edamame are easiest for kids.

Cut the pita into triangles, slice the cucumber into coins or sticks, slice the apple, and quarter the cherry tomatoes.

Spoon the hummus into a small cup or silicone liner. Fill the other sections with pita, cucumber, apple, tomatoes and the edamame.

Close it up and add an ice pack.
Pack the night before and keep it in the fridge. An ice pack keeps it safe until lunch.
- Rotate the protein: edamame, tofu fingers, lentil meatball bites, or nugget bites.
- Peanut-free school? Hummus and sunflower seed butter are both safe swaps.
For little ones
Let them choose one thing per section. Kids eat more of what they picked.
