

Sneaky Veggie Red Sauce Pasta
This is the one for the kid who picks out every green thing. The vegetables get simmered soft and blended into the marinara until they disappear. Lentils go in whole, and they look just like the bits in a meat sauce. Serve a few veggies on the side too, so they still see them.

Method

Cook the pasta in salted water according to the package. Save a mug of the pasta water before draining.

While it boils, warm the oil in a saucepan and cook the carrot and zucchini with a splash of water, covered, until very soft.

Add the garlic and spinach for 1 minute, until the spinach wilts.

Tip everything into a blender with the marinara and nutritional yeast and blend until completely smooth.

Pour the sauce back into the pan, stir in the lentils and simmer until hot.

Toss with the drained pasta, loosening with a splash of pasta water if it's thick.
Sauce keeps 5 days and freezes for 3 months.
- Still too chunky for your kid? Blend the lentils into the sauce too. Nobody will know.
- Freeze the sauce in muffin cups for kid-size portions.
For little ones
Serve as is. Let them sprinkle the nutritional yeast themselves.
