Method

Pour boiling water over the rice noodles and let them soak until tender.

Meanwhile, microwave the edamame for 2 minutes.

Whisk the peanut butter, coconut aminos, lime, sriracha, garlic and hot water into a smooth sauce.

Slice the green onions.

Drain the noodles, then toss them with the sauce, the edamame and the slaw until everything is glossy.

Top with green onion and an extra squeeze of lime. Eat warm or cold.
Keeps 3 days in the fridge. Loosen with a splash of hot water before eating.
