Green Goddess Edamame Dip

Edamame blends into a thick, creamy dip with tahini, lemon, garlic and a big handful of herbs. It packs about three times the protein of regular hummus. Serve it with crunchy vegetables and watch it vanish at the party.

Method

    Save a few edamame for the top.

  2. 2

    Blend the edamame with the tahini, lemon, garlic, herbs, olive oil, cold water and salt until very smooth, scraping down the sides once.

    Cut the carrots and cucumber into sticks.

  4. 4

    Spoon into a bowl, swirl the top, and finish with the reserved edamame. Serve with the vegetable sticks.

Storage

Keeps 5 days in the fridge. Press plastic wrap onto the surface so it stays bright green.

  • Cold water makes it fluffier. It's the same trick restaurants use for hummus.
