Pinwheels make vegetables look like fun. Smashed chickpeas and hummus act as the glue, and the colors show up in every slice. They pack well, don't need heating and are easy for small hands to hold.

Method

Finely grate the carrot and cut the bell pepper into thin strips.

Mash the chickpeas into the hummus with a fork until it's a thick, spreadable paste.

Spread it to the edges of each tortilla. Scatter the carrot, pepper and spinach over the bottom two-thirds.

Roll up tightly from the filled side. The bare edge seals it shut.

Slice each roll into 6 to 8 pinwheels. For little ones, slice them thinner.
Pack whole and slice in the morning, or keep sliced 1 day in the fridge. An ice pack keeps them safe until lunch.
- Spinach tortillas make them even more colorful.

For little ones
Pack 6 to 8 slices with fruit. Let them roll their own.
