

Blueberry Protein Baked Oats
It tastes like a blueberry muffin that decided to get its life together. One bowl, one pan, and six squares that reheat in 40 seconds. Nobody in your house will complain about this being the plan.

Method

Heat the oven to 375°F and line an 8x8 pan with parchment.

Mash the bananas in a big bowl, then whisk in the oat milk, maple, flax and the protein powder until there are no dry pockets.

Stir in the oats, baking powder, cinnamon and salt, then fold in most of the blueberries. Spread into the pan and scatter the rest on top.

Bake until the center is set and the edges are golden.

Cool 10 minutes, then cut into 6 squares. Warm leftovers in the microwave for 40 seconds.
Keeps 5 days in the fridge. Freeze individual squares for up to 2 months.
- Frozen blueberries go in straight from the freezer. Thawing them first turns the whole pan purple.
