Method
- 1
Cut the leaves off the cauliflower. Cut each head down the middle, then cut each half into quarters.
- 2
Gently break each quarter into florets and add them to a large bowl.
- 3
Add the tomatoes, hemp seeds, fresh turmeric, garlic, jalapeño, Thai chili if you want extra heat, apple cider vinegar, a small handful of fresh oregano leaves and the dates to a high-speed blender. Blend until completely smooth.
- 4
Pour the buffalo sauce over the florets and toss until every piece is coated. Let them marinate for 20 to 30 minutes.
- 5
Line your dehydrator trays with silicone dehydrator sheets or parchment paper.
- 6
Spread the coated florets on the trays. Dehydrate at 105°F for 4 to 5 hours, until the wings are tender and the sauce has set.
- 7
Chop the parsley and sprinkle it over the wings.
- 8
Serve the wings with the celery sticks and hempseed ranch for dipping.
Keep leftovers in an airtight container in the fridge for up to 3 days.
- Leave the jalapeño seeds in for more heat, or take them out for a milder sauce.
- No dehydrator? Bake on the lowest oven setting with the door slightly open until tender. They won't be raw, but they'll still be tasty.
- Wear gloves when handling fresh turmeric, because it stains hands and boards.
