Method

  1. 1

Spiralize the 2 large zucchinis into noodles and pile them into a big bowl or onto plates.

  2. 2

Add the tomatoes, pitted dates, 5 figs, a splash of water and your seasoning to a blender.

  3. 3

Blend the red sauce until smooth.

  4. 4

    Thinly chop the onion.

  5. 5

Slice the cherry tomatoes and the 4 remaining figs.

  6. 6

Pour the red sauce over the zucchini noodles and toss to coat.

  7. 7

Top with the onion, lentil sprouts, sliced cherry tomatoes and figs, then serve right away.

Good to know
  • Pat the zucchini noodles dry with a towel for a thicker, less watery sauce.
  • Taste the sauce before pouring and add more cumin or hot pepper if you like it bolder.
