JC's Baked Banana Surprise, Strawberry and Apricot Variation

Warm baked banana over stewed strawberries and apricots, satisfying as-is. Method

    Equipment: oven, baking sheet, parchment paper, knife, cutting board, saucepan, spoon or spatula, a bowl for serving.

    Bake the banana: Preheat oven to 420 to 425°F (215 to 218°C). Lightly rinse the banana if needed. Cut off a small portion of the top and bottom, keeping the peel on. Place the banana on a parchment-lined baking sheet and put it in the oven while it preheats. Bake until soft and fragrant, about 15 to 20 minutes, depending on ripeness.

    Prepare the fruit: Remove strawberry tops and quarter the strawberries. Cut dried apricots in half. Pit dates, check for quality, and roughly chop, if using.

    Start the stewed fruit: Add ½ to 1 cup applesauce to a saucepan. Thin slightly with 2 to 4 teaspoons of water, aiming for mostly applesauce, lightly loosened. Heat on medium to medium-high, stirring gently.

    Cook the fruit: Add strawberries, apricots, and dates to the applesauce. Stir and allow to cook uncovered while the banana bakes. Reduce heat to medium and cook for 5 to 10 minutes, until strawberries soften and the mixture thickens and bubbles gently. Stir occasionally to prevent sticking.

    Finish the banana: Remove the banana from the oven and let cool briefly. Carefully slice open the peel and remove the banana, saving any natural juices released during baking.

    Assemble: Spoon the stewed fruit into a bowl. Add the baked banana on top and drizzle any banana juices over the dish.
