Ten-Minute Veggie Scramble

Liquid plant egg scrambles low and slow into big, soft curds. Peppers and spinach go in first, a little cheese at the end, toast on the side. It's the weekend breakfast you can pull off on a Tuesday.

Method

    Toast the bread.

    Warm the oil in a nonstick pan over medium. Soften the pepper, then wilt in the spinach.

    Turn the heat to medium-low. Pour in the JUST Egg and let it sit for 30 seconds.

  4. 4

    Push gently from the edges to the center to make big soft curds. Stop while it still looks a little wet.

  5. 5

    Scatter the cheese over, season, and serve with toast.

Storage

Best fresh. Leftovers keep 2 days and reheat in 30 seconds.

Good to know
  • Tofu works too: crumble a block with turmeric and black salt for an egg-like flavor and more protein.
