French Toast Sticks

French toast sticks are a weekend breakfast kids actually ask for. The batter is liquid plant egg, soy milk and cinnamon, and it soaks into thick bread just like the classic. The air fryer makes them crisp with barely any oil, and leftovers freeze for a toaster breakfast on school days.

Method

  1. 1

Whisk the JUST Egg, soy milk and cinnamon in a shallow dish. Cut each slice of bread into 3 sticks.

  2. 2

Dip each stick for a few seconds per side so it soaks up the batter without falling apart.

  3. 3

Melt the butter in a nonstick skillet over medium and cook the sticks, turning, until golden on every side.

  4. 4

Serve with maple syrup for dunking and berries on the side.

Storage

Freeze cooled sticks on a tray, then bag them. Reheat in the toaster or air fryer.

Good to know
  • Stale bread soaks up more batter without going soggy.

Serve with maple and fruit. Freeze extras for school mornings.
