

Protein Banana Bread
Moist, cinnamon-warm, and loaded with toasted walnuts, this is banana bread that happens to have real protein in every slice. Mixing takes 15 minutes, then the oven does the work. The smell alone is worth it.

Method

Heat the oven to 350°F and line a loaf pan with parchment.

Mix the flax with 3 tablespoons of water and let it thicken for 5 minutes.

Mash the bananas, then whisk in the flax mixture, oat milk, maple, oil, vanilla and cinnamon.

Whisk the flour, the protein powder, baking powder and salt in a second bowl, then fold into the wet mix until just combined. Fold in the walnuts.

Pour into the pan and bake until a toothpick comes out with a few moist crumbs.

Cool in the pan 15 minutes, then on a rack. Slicing it hot makes it gummy, so be strong.
Keeps 4 days wrapped on the counter or 5 in the fridge. Freeze slices for up to 3 months.
- Protein powder bakes up drier than flour, so don't skip the oil or overbake it.
