Method
- 1
Cook your rice following the packet directions, enough to feed everyone.
- 2
Chop the potato, carrots and broccoli into small chunks so they cook quickly.
- 3
Steam the chunks until a knife slides through easily.
- 4
Chop the zucchini and spinach into small pieces.
- 5
Add a splash of water to a large pot with the curry paste. Heat and stir until there are no lumps left.
- 6
Pour in the coconut milk and stir until it is smoothly mixed with the paste.
- 7
Add the steamed veggies, zucchini and spinach to the pot. Cook on higher heat, stirring a few times, until everything is hot and the greens are wilted. Turn it down low and simmer longer if you have time.
- 8
Season with salt and chilli flakes to taste. Serve over rice with chopped walnuts and cilantro on top.
Keeps in the fridge for 4 days. Reheat gently with a splash of water.
- Swap in sweet potato, taro or mushrooms for the veggies.
- Add the curry paste a tablespoon at a time and taste as you go if you like it milder.
