- 1
Chop the potato and broccoli into small pieces and put them in a steamer pot.
- 2
Chop the zucchini and Swiss chard and lay them on top of the potato and broccoli.
- 3
Steam with the lid on until everything is soft.
- 4
Lift out the Swiss chard, zucchini and a few pieces of broccoli. Set them aside for topping.
- 5
Put the leftover potato and broccoli in a large bowl or pot. Add water a splash at a time and blend with a stick blender until creamy.
- 6
Add the cumin, thyme, Italian seasoning, salt and pepper. Blend or stir well, then taste and adjust.
- 7
Pour the blend onto a large rimmed plate or into a bowl. Top with the reserved veggies and fresh avocado.
Keeps in the fridge for 3 days. Add avocado fresh when serving.
- Add water slowly so the blend does not get too thin.
- Try swapping the broccoli for mushrooms, cauliflower, leek, zucchini or beetroot.
